The Chinese have mastered the art and science of mass scale production and distribution in every field and every product.

Therefore food production/distribution and serving are also done in a very efficient way.
I have seen restaurants/banquet halls with several thousands of sitting capacity, and the touring buses lined up for lunch/dinner.

The efficiency of this restaurant is worth seeing.

The lazy susan is the most efficient way of serving food.

The laws of the lazy susan are straightforward:

It is served on a round table, usually sitting capacity is on a table is 8 to 10.
One dish comes enough for the sitting capacity.
The unwritten law is to be respectful of each other and one another.
Everyone gets a dig at the dish.
Meanwhile, the 2nd/3rd/4th dish comes along, and everyone gets a reasonable portion so that everyone gets his/her part.
No waiter, no server to wait, the server puts the dish and disappears to bring another dish.
Various beverages are also placed on the roundtable for self-serving.
Second unwritten law: When one dish is finished, that is the end, you cannot get another refill.

Conclusion:

Lazy Susan method is the most efficient way of serving food; the speed is mind-boggling. China is a massive country with 1.4 billion people.
With 100 s and 1000 s of dishes, it is an efficient way to portion control/waste control.
In everything revolves around food, and the Lazy Susan ironically fits that definition.
